The Big Knob Diner's Pancake Recipe

Big Knob Diner Pancakes

2 cups flour
2 tsp baking powder
½ tsp salt
3 tbsp sugar
2 eggs
1 ¾ cups milk, add more depending on pancake thickness preference
6 tbsp melted butter, use real butter, not substitute

  1. Sift flour, measure, add baking powder, salt and sugar; sift again.
  2. Beat egg whites until stiff but not dry; set aside.
  3. Beat egg yolks; add milk
  4. Add sifted dry ingredients and mix just enough to blend; add melted shortening
  5. Fold in stiffly beaten egg whites.
  6. Pour on hot (water dances on surface) griddle.
  7. After flipping, butter tops.
  8. Serve with warm maple syrup.

Serves four, unless you’re really hungry!
