The Big Knob Diner's Pancake Recipe
Big Knob Diner Pancakes
2 cups flour
2 tsp baking powder
½ tsp salt
3 tbsp sugar
2 eggs
1 ¾ cups milk, add more depending on pancake thickness preference
6 tbsp melted butter, use real butter, not substitute
- Sift flour, measure, add baking powder, salt and sugar; sift again.
- Beat egg whites until stiff but not dry; set aside.
- Beat egg yolks; add milk
- Add sifted dry ingredients and mix just enough to blend; add melted shortening
- Fold in stiffly beaten egg whites.
- Pour on hot (water dances on surface) griddle.
- After flipping, butter tops.
- Serve with warm maple syrup.
Serves four, unless you’re really hungry!
