Mitchell Tonks is founder and chef of the acclaimed Green Street Seafood Cafe and Fish Market in Bath. He now runs the Fishworks fishmongers, restaurants and cookery schools in London, Bath, Bristol and Christchurch, where his emphasis on quality fresh fish and simple cooking has earned him a host of accolades. A fishmonger and self-trained chef, his love of the sea and passion for seafood brought him to cooking only 4 years ago. His first book, , brought his relaxed and easy style of cooking into the domestic kitchen and was shortlisted for the 2002 Andre Simon Award.
